If your cooking needs are less than 6 hours a day, mesh filter systems may be functional and economical. Mesh filters work by trapping grease with metal mesh fabric that is layered into filters. These filters are not designed to remove a lot of grease and will fail under heavy cooking conditions. They should never be used above grills, frying appliances, and griddles. It is not hard to remove mesh filters to clean them. However, they do not last a long time and will need frequent replacement if used regularly. These filters are often cleaned with hot water and strong detergent. They work best in environments with little to no frying. Most commercial kitchen extraction applications include the use of a baffle filtration method. The baffle filter represents a great deal more efficiency over a simple mesh system. When grease enters the air of a baffle system it is sucked through baffles that force air into one direction, and then another, and this separates grease from air. The grease can then be channeled into a drain system for disposal. Baffles are not hard to maintain, as they can be cleaned in a dishwasher. Some types of ventilation systems use cartridges. The cartridges are stainless steel and are not disposable type of units. This kind of system is generally used under heavy conditions as they are more efficient than the baffle system. As with the baffle filters, clean up can be in dishwashers. Fire safety is a major concern with commercial kitchen applications and environments. This is especially important if there is constant frying and cooking. A fire can easily happen with little notice and can rapidly spread, putting many people in danger. Commercial ventilation should include some type of fire suppression system for placing chemicals on fires automatically. Effective systems need to shut off all of the power to the kitchen, also. In closing, when it comes to commercial kitchen extraction, nothing is more important than health and safety of customers and employees. Your food business needs to have the right kind of system for efficiency and safety. If you do not fry a lot and cook for a few hours a day, a mesh system can work. Most business use a system with baffles as it is very efficient and separates grease for disposal. Heavy duty applications may need stainless steel cartridge systems or better. However, all will need some kind of fire prevention and suppression system. Check with your local authorities for concerns.
